Red Deer/Red Stag (Europe)
Scientific Name: Cervus elaphus
Subspecies: We recognise the following subspecies for Europe: East European Red Deer (C.e. montanus) Corsican Red Deer (C.e. corsicanus)
Distribution: Red Deer is found in most European countries.
Habitat: Woodland, pasture land, wetlands and moorland. Is found in lowlands as well as on high ground and in mountains.
Description: Large deer weighing around 100 - 200 kg measuring around 150 cm over the shoulder. General colour rufous brown in summer and greyish brown in winter. The antlers are branched rather than palmate and have anything from 2 up to 12 - 16 points.
Hunting method: Stalking, lying in wait or driven hunt.

1. Чеснови пъдпъдъци на фурна
Една прекрасна рецепта за дивечово месо от пъдпъдъци.- Готвене: 45 мин.

Необходими Съставки
- пъдпъдък - 4 бр.
- домати - за аранжиране + краставици
За соса
- сол - 1 ч.л.
- червен пипер - 1 ч.л.
- масло - 2 с.л.
- чесън - 5 скилитки
- черен пипер - 1 к.л.
- риган - щипка
Начин на приготвяне
Изчистваме и измиваме пъдпъдъците хубаво, така че да не останат пера никъде, след което взимаме една купа добавяме вътре масло, сол, черен пипер, червен пипер, риган и счукан или пресован чесън.
Разбърквам хубаво сместа и намазваме пъдпъдъците отвътре и отвън и печем на загрята фурна на 180 градуса за около 45 минути.
Сервираме печените пъдпъдъци топли с гарнирани зеленчуци. За целта използвах домати и краставици, но може и друго.
Вкусът на тези чеснови пъдпъдъци на фурна става уникален.
2. Печени ребра от диво прасе
Една прекрасна рецепта за дивечово месо от дива свиня.
- Приготвяне: 30 мин.
- Готвене: 80 мин.

Необходими Съставки
- ребра - 1 кг
- сол
- риган
- чубрица
- соев сос - 1 с.л.
- олио - 2 с.л.
- мед - 1 с.л.
- червен пипер - 1 к.л.
- вода - 1/2 ч.ч.
- вино - 1/2 ч.ч.
Начин на приготвяне
При дивечовото месо много е важна обработката, затова месото трябва да престои в марината.
В съд изсипваме олиото и всички други подправки.
Изчистените и измити ребра поставяме в марината и оставяме да престоят за 24 часа в хладилника.
След изтичане на времето ги нареждаме в йенски съд, като прибавяме 1/2 ч.ч вода и 1/2 ч.ч. вино.
Покриваме с фолио и ги поставяме във фурната да се пекат за около час и половина.
Малко преди да извадим ребрата отстраняваме фолиото и оставяме да се запекат за кратко време.
